Kelly's Korner - Summer is Coming

Hey, All,

If you are a Game of Thrones fan, I have taken a little liberty with one of their catch phrases.  I don't know about you, but I am not a fan of summer.  I do not like the heat and the thought of ANY cooking makes me ill.  Although now I have the Traeger, it does make it a bit easier on a lot of  the cooking , I don't even want to eat when it's hot.

But I do have to eat and so do my boys.  We eat a lot of salads and sandwiches during the summer and one favorite recipe I am going to share is a big fav in my house.  We love a good everything-but-the-kitchen-sink chicken salad wrap - the more stuff I throw in it, the better.  Not everyone likes everything I put in it but unless they want to fix it, they're stuck.

All the ingredients you  will need to adjust to taste but here it is:

Kelly's Everything-But-The-Kitchen-Sink Chicken Salad Wraps

  • 1 pkg frozen chicken breasts, cooked and shredded or diced (I usually just boil them but I am going to try cooking them on the Traeger for that extra flavor)
  • Bacon, cooked and crumbled (I like the thick sliced bacon and cutting the strips in 1 inch chunks and just as it is done cooking, dropping a huge spoonful of chopped garlic in the grease - be careful and don't burn the garlic - and cook just enough to start smelling the garlic then drain - there is no such thing as too much garlic in my house)
  • Chopped celery
  • Diced green onions
  • Chopped water chestnuts
  • Sliced black olives
  • Thawed frozen green peas
  • Shredded cheddar cheese
  • Shredded carrots
  • Couple of packets of powdered ranch mix and mayo or ranch dressing
  • Garlic salt and pepper to taste.


While the chicken is cooking we all share in the slicing and dicing - that way no one person is doing everything and it goes a lot faster - especially if you are increasing the ingredients to feed an army.  After everything is cooked, sliced and diced, I dump everything into the biggest bowl I have or my stock pot, then I add the dressing and seasonings while mixing it all together.
There are so many wraps (basically flavored soft tortillas) that everyone one can have what they like - cheese, spinach, whole wheat or whatever.  I keep the salad mix covered in the fridge and the boys can spoon how much they like on a wrap and roll it up and they are good.
